As for your previous posting…may I suggest searing your salmon with a (handheld) blowtorch? Really brings out the flavor…and far less likely to elicit your smoke detectors.
I’m very happy about the McGann. It’s an expensive book! And one that I will probably need to read sooner rather than later. Thanks.
Good idea on the blowtorch. When they use it on the Food Network it seems to work well. I rarely cook real meals for myself, so I haven’t invested in such an item (or many other kitchen items. I do have a microwave and the notorious Muffin Maker).
