My plan tonight is to make meatloaf. I’ve never made it, but after reminiscing about Globe Market’s meatloaf I’m going to give it a go. So my question is… does anyone have any secret meatloaf ingredients to recommend?

    Yep – the meat blend – 2 parts ground beef, 1 part Pork, and 1 part Ground veal

    1 med onion chopped, 2 cloves garlic – fry 5 minutes then combine with

    2 eggs, 1/2 tsp thyme, 1 tsp salt, 1/2 tsp ground pepper, 2 tsp dijon mustard, 2 tsp worcestershire sauce, 1/4 tsp tabasco, 1/2 cup yoghurt, 2/3 cup saltine crackers crushed or same oatmeal, 1/3 cup chopped parsley

    mix and form into loaf on baking sheet, top with bacon slices, bake at 350 degrees for 1 hour

    This is from Cook’s Magazine, and is in muy opinion, the best meatloaf I’ve ever had

    Oops – forgot the meat – 1 lb ground beef, 1/2 lb ground pork, 1/2 lb ground veal – the veal is the secret to the tenderness

    Yep, the mix o’ meat is key.

    The suggested recipe sounds really good. I’d perhaps substitute Italian-style breadcrumbs for the crushed crackers or oatmeal, but hen if you don’t have breadcrumbs . . .

    Good luck on this. I know there’s a chance you won’t do it though, but still it’s fun to think about (see Baudelaire’s prose poem about incompleted projects).

    hm… ok, so the local grocery store doesn’t have veal (ground or unground) (actually maybe this is ok. maybe if i thought about it i wouldn’t want to use veal anyway?) so i’m going to do a variation on tag’s recipe. also i’m going to try amy’s method of putting cream cheese in the mashed potatoes, but i’m leaving the skins on (mags) (else is heresy).

    logan, you are as usual NO HELP at all, but since we’re family, i guess i love you anyway.

    Cream cheese in mashed potatoes is good good good. As is a mix of meat in the meatloaf. I’ve used ground lamb, and it was good.

    I have also made a “healthy” meatloaf out of ground turkey. It was actually very good, too.

    Looks yummy! I am trying to cook more, so maybe I will try this recipe out. And I loooove cold meatloaf sandwiches.

    mmm me too. this turned out well, although next time i’ll plan ahead a bit and get the right kinds of meat.
